The mechanism is concealed inside the sculpture. Gravity pushes a piston down a cylinder filled with water (or wine), forcing the liquid to rise into the sprinkler that passes through the barmaid's bent arm. The liquid flows from the pitcher to the cup carried by the hand, and then back into the cylinder. The mechanism is re-activated by winding up the weight with the handle protruding from the back of the figure.
